Al Fresco Baby

Tonight we enjoyed some al fresco dining with some suitably al fresco foods. Panzanella and gnocchi with roast veg. Lots of lovely food to savour and enjoy!

Today also seen the appearance of "proper" nappies. The kind that make you want to run to the bathroom and see your last meal in detail. These were proper poo's. There was also some form and everything. There was also a lot of it, twice.

And so to dinner, panzanella is one of my favourite summer salads, the Wee One seemed to enjoy the tomatoey bread.

Panzanella

Approx 20 Cherry Tomatoes
1/2 French Stick Baguette (stale)
2 Balls of Mozarella
2 tablespoons of Red Wine Vinegar
4 Tablespoons of Olive Oil
Handful of Basil Leaves
Black Pepper

1. Chop tomatoes roughly into around 1 inch cubes. Cover with oil and vinegar, grind some pepper to taste and set aside for 15-20 minutes.

2. If your bread is not stale already, cut into slices and dry in the oven. Slice the bread into around 1 inch slices.

3. Tear half the basil and add the the tomatoes and stir thoroughly. Slice the mozarella into fine slices and mix though the tomatoes. Leave at room temperature.

4. 10 minutes before you want to serve, tear up the bread and stir trough the tomato mixture. Tear up the rest of the basil and stir through. Put the panzanella in the fridge until you are ready to serve.
